On the terrace, at the lake, on the allotment, by the river, or in the garden? It doesn't matter where, the fact is that the barbecue trend is well established in Poland. As many as 66% of Polish people* declare that they spend almost every warm weekend on a barbecue. 

Although with the coming of autumn we finished the 2021 barbecue season, in PROMAR we are already ready for the new 2022 season - after all, for barbecue lovers, the season lasts all year long! The last two years have introduced quite a revolution, changing the culinary behavior of consumers around the world. The biggest change is the very popular home delivery and online shopping. The closing of restaurants has in a way forced us to cook at home, and ordering breakfasts, lunches, and dinners with home delivery has become the norm. 
 
So what awaits us in 2022?  

Outdoors 
The pandemic has made us appreciate even more the time spent outside at barbecues, picnics, or garden parties. This is also reflected in restaurants, which, in an effort to enhance the consumer experience as well as ensure consumer safety, are arranging outdoor spaces. It is no wonder that from early spring until late autumn, whenever the weather is good, the smell of roast meat is in the air all over Poland. Pork sausage remains the Polish queen of barbecue, chosen by almost 80% of consumers during the feast. Just behind it is a chicken fillet, chosen by over 70% of Polish people. Every other respondent throws chicken wings and pork neck on the grill**.  

The concept of food as medicine 
According to a public opinion poll performed by UCE Research and Syno Poland, 40.2% of Polish people changed their eating habits for the better during the pandemic. Thanks to remote working and the closure of restaurants, we have gained more time to prepare and regularly consume well-balanced meals at home. What's more, the popularity of products and spices that replace medicines, e.g. boost immunity or promote regeneration, is growing. We have started to care more about the health of our intestines, which house up to 70% of the body's immune cells. This trend is also reflected in grilling.  

Roman caraway (Slavic name of cumin) is gaining popularity as it adds spiciness and tanginess. An addition to dishes has a beneficial effect on the digestive system. It lowers the concentration of bad cholesterol and blood glucose, as well as shows antibacterial and antifungal properties.  

Natural antibiotic - garlic, which for years has also been used in barbecues, cannot be omitted here. It is one of the most versatile medicinal plants in the world. Among other things, it helps fight viral infections and upper respiratory tract infections, lowers blood pressure, and accelerates the work of the intestines.

Scents and senses 
Another trend, strongly shaped in recent times, is directly related to our sensations while eating. Eating food is now also an olfactory training and an opportunity to experiment with new flavor profiles. Barbecue flavors are highly varied and range from sweet, to spicy, smoky, or herbal. According to Jan Miller - food editor at Better Homes & Gardens, home cooks have a strong appetite for healthful sauces and innovative spice blends that boost creativity, fun, flavor, and variety. They want fast, flavorful, and fun meals. Meanwhile, our research confirms that Polish consumers are most likely to choose products with flavors like paprika, garlic, onion, and tomato for grilling**. 
 
Poland tastes good!  
In recent years, the Polish people have gone mad - in a positive sense - for barbecue. What is more, common feasting in the open air with family and friends is even more appreciated and practiced in recent seasons. We are also glad that our compatriots are more and more consciously choosing local products which are exceptionally tasty. Consumers have a lot to choose from - stores present wide offers, even separating special barbecue zones.
