On 23-27 August 2021 the 67th ICoMST Congress - International Congress of Meat Science and Technology took place. Poland was chosen to host this year's meeting of leading representatives of the meat industry. The event was organised by the Faculty of Food Technology - Department of Animal Products Processing of the Agricultural University in Krakow. The conference was held in a hybrid format. The stationary form took place in Krakow, but there was also an opportunity to participate in workshops in an online form. 

A few words about the Congress:

The congress has been organised since 1955. It is considered to be the largest and most prestigious meeting of representatives of the meat industry. It is attended by more than 550 scientists, professionals and businesses from around the world. The aim of the conference was to present the latest industry developments and innovations, review the work as well as to share current knowledge on meat and meat alternatives.

ICoMST 2021 guests at PROMAR:

PROMAR as an event partner for the participants attending the congress organised the meeting. On 25 August, a group of representatives from France, Belgium, Poland and Denmark visited the recently commissioned Research and Development Centre, located in the company's headquarters in Zawiercie. 

During the visit, the guests had the opportunity to tour the Academy of Taste building and take a close look at the work of their colleagues from the development department. During the visit, the guests were presented with Handtmann's latest solution for double coextrusion. 

During the presentation, specially designed flavour fillings and alginate casings dedicated to this type of products were used.
Finally, the congress participants had the opportunity to taste and assess the texture and flavour of the previously prepared products.
